Oats
- ½ cup old-fashioned rolled oats40 g old-fashioned rolled oats
- 1 scoop chocolate whey protein powder1 scoop chocolate whey protein powder
- 2 tbsp powdered peanut butter2 tbsp powdered peanut butter
- 1 tbsp unsweetened cocoa powder1 tbsp unsweetened cocoa powder
- 1 tsp chia seeds1 tsp chia seeds
- 0.1 tsp kosher salt, a pinch0.1 tsp kosher salt, a pinch
- ¾ cup unsweetened almond milk175 ml unsweetened almond milk
- ⅓ cup nonfat plain Greek yogurt75 g nonfat plain Greek yogurt
Topping
- 2 tsp creamy peanut butter2 tsp creamy peanut butter
- ¼ medium banana, sliced¼ medium banana, sliced
- flaky sea salt, to tasteflaky sea salt, to taste
Method
- In the jar, stir together the oats, protein powder, powdered peanut butter, cocoa, chia seeds and salt with a fork, breaking up any cocoa lumps. Dry first means no chalky pockets later.
- Pour in the almond milk and stir hard for 30 seconds, scraping the bottom corners, until it looks like loose chocolate batter. Fold in the yogurt.
- Cover and refrigerate at least 6 hours, or up to 3 days. The oats soften and the mix sets thick and pudding-like.
- In the morning, stir once. If it is thicker than you like, loosen with 1 to 2 tablespoons more milk.
- Microwave the peanut butter for 10 seconds so it pours, drizzle it over the oats, and top with the banana slices and a few flakes of salt.
- Whey brands absorb liquid differently. If yours sets like cement, add 2 tablespoons more milk the night before.
- Make 4 jars on Sunday and keep the toppings separate so the banana stays bright.
- Want it warm? Microwave without the toppings for 60 to 90 seconds, stirring halfway.
Keeping it: Keeps 3 days covered in the fridge. Add the peanut butter drizzle and banana right before eating.
