Lean Beef Bolognese
Hour-simmered ragù on wide ribbons. 46g protein.
Bolognese is about patience, not fat. Lean beef browned hard for flavor, a slow-cooked base of onion, carrot and celery, milk simmered in to make the meat tender, then wine and tomato reduced for an hour until the sauce is thick, glossy and deeply savory. Tossed with wide ribbons and Parmesan, it tastes like Sunday all week.
